Vintage Friday: Cheesecake Cookies 1978 by Flossie Benton Rogers

Ronnie&Ashley&YuraMay1978I call my two grandsons my Snickerdoodles, and my son is the original Snickerdoodle. Above, his blonde haired little self is with my husband/his father and our dog Yura, daughter of our previous dog Zhivago. A bicentennial baby, our son’s favorite dessert of all time is cheesecake. He is a wonderful son—and he’s a little under the weather today so I’m sending him some positive thought waves. In his honor here is a quite yummy vintage recipe for cheesecake bar cookies.

CHEESECAKE BARS

Ingredients:
1/3 cup butter, 1/3 cup firmly packed light brown sugar, 1 cup sifted flour, 1/2 cup chopped walnuts (or experiment with pecans or other nuts),1/4 cup sugar or sugar-splenda, an 8 ounce pack of softened cream cheese, 1 beaten egg, 2 tablespoons milk, 1 tablespoon lemon juice, 1/2 teaspoon vanilla.

Directions:
Topping/crust- Cream butter and brown sugar until fluffy, and then add flour and nuts. Cream with back of spoon until mixture turns into crumbs. Set aside 1 cup of mixture for topping, and press remaining into ungreased 8 inch square baking pan. Bake in preheated 350 degree oven for 12-15 minutes. Set aside to cool.
Filling- Place white sugar and cream cheese in bowl and beat until smooth. Add egg, milk, lemon juice, and vanilla. Beat well. Spread evenly over baked, cooled crumb crust. Sprinkle remaining cup of crumbs over top. Bake at 350 degrees for 30 minutes. Cool. Cut into bars 2 inches by 2 inch. Make sure to keep bars in refrigerator. Recipe makes 32 bars.
