In Demoness Dreams – Wytchfae 6, the hero Bane Heughar—also known as Odin’s Warrior—orders pancakes when he has breakfast with heroine Neva Jaxony the first time. Today for Vintage Friday we honor our courageous, sexy hero Bane with some Norse inspired pancake recipes.
Rummerbrod
Ingredients: 1 cup of cold mashed potatoes, 2 tablespoons of sugar, a pinch of salt, 1 cup of sour cream, flour as needed.
Directions: Mix ingredients. Add enough flour to make a soft dough that you can roll out in thin rounds. Cook them on a griddle. They may also be baked in the oven. Cut each round in wedges. Butter them and roll them up like a cone to serve. These are also delicious if sprinkled with cinnamon and sugar after you butter them.
Vafler
Ingredients: 1 pint of sour cream, 4 teaspoons of melted butter, 3 cups of flour, ½ cup of water.
Directions: Beat cream until it is stiff and add the other ingredients gradually, while beating. Cook by spooning onto a waffle iron or griddle. These are traditionally rolled around a piece of ham to be served. They are also delicious sprinkled with cinnamon and sugar.
Lefse
Ingredients: 5 cups of hot mashed potatoes, 3 tablespoons of butter, 3/4 teaspoon of salt, ½ cup of cream, 2 cups of flour.
Directions: Add cream, salt, and butter to hot mashed potatoes. Set aside and let it cool. Add flour to make a soft dough that you can roll out—the amount is approximately 2 cups, but use what is needed. Cut dough into 16 equal parts. Bake these on the top of the stove or with a special lefse baker.

Yum! They all sound delicious and are making me hungry. I just saw a cooking show last week in which the host made pancakes using mashed potatoes and the whole concept was new to me. Who knew it’s actually a very old one! 🙂
