Cocktail Saturday: Watermelon Margarita

Mother'sDaylunch2014aThis scrumptious watermelon margarita accompanied my spicy Mother’s Day lunch yesterday with my wonderful son and daughter-in-law. Talk about refreshing! We celebrated early because of his work schedule.

Watermelon Margarita

Ingredients: 2 ½ cups of fresh watermelon cut into small chunks and with the seeds removed—place in a small baggie and freeze for two hours, 4 ounces tequila, 2 ounces Triple Sec orange liqueur, 3 tablespoons lime juice, lime wedge, coarse salt, fresh watermelon chunks for garnish.

Directions:
Use the lime wedge to moisten the rim of a large cocktail glass and tilt the rim into the coarse salt all the way around to coat it. Some people prefer to use watermelon to moisten the rim and then coat it with sugar. Not me! I eat my watermelon with lots of salt and like my watermelon margarita glass coated with lots of salt.

Place watermelon chunks, tequila, Triple Sec, and lime juice in blender and puree until smooth. Pour into cocktail glass, and garnish with small watermelon chunks loaded onto a fancy toothpick. Sip through a small cocktail straw and enjoy!

Depending on the size of the glass used, you’ll get two or more cocktails from this recipe.
