Vintage Friday: Coca Cola Cake 1972

Welcome to the party! 

All the rage in the 1960s and 1970s, a coca cola cake is easy to make and includes a delicious icing that stiffens up and becomes candy-like as it sets. 

COCA COLA CAKE  

2 cups plain flour

2 cups sugar

2 sticks butter

3 tablespoons cocoa

1 cup Coca Cola

1/2 cup buttermilk

2 eggs, beaten

1 teaspoon baking soda

1 teaspoon vanilla extract

1 1/2 cups mini marshmallows

In a large mixing bowl, combine flour and sugar. In a medium sauce pan, heat butter, cocoa, and coca cola until the mixture reaches boiling. Remove from heat and carefully pour over the flour and sugar mixture, blending thoroughly. Add buttermilk, eggs, baking soda, vanilla extract, and mini marshmallows. Mix completely. The batter will be rather thin, with the marshmallows floating on top. Bake in a greased and floured flat pan at 350 degrees for 30-35 minutes. Ice the cake while hot.

COCA COLA ICING

1 stick butter

3 tablespoons cocoa

6 tablespoons Coca Cola

1 box of powdered sugar

1 cup of chopped pecans

1 teaspoon vanilla extract

Place sugar in a mixing bowl and set aside. In a medium saucepan, heat butter and coca cola until the mixture reaches boiling. Remove from heat and carefully pour mixture over sugar. Beat well. Stir in chopped pecans and vanilla. Spread the icing over the hot cake.

    I don’t really remember Coco Cola cakes, but I’m sure I must have had one. A fun recipe to go with a fun song!

  2. wow this brought back a lot of memories. Mom used to make this cake called the soda her secret ingredient LOL I havent heard this song in ages I remember running around belting it out ! LOL
