Cocktail Saturday: Tom Collins

Gin was the go to spirit in the 1950s when martinis, gimlets, and Tom Collins were all the rage. Those retro drinks are seeing a big comeback right now in the second decade of the 21st century. Gimlet is one of my favorites– so refreshing. Martinis seem ultra strong to me, but they’re also the height of sophistication. I’m still waiting for my friend Karen to make me one of her famous dirty martinis. Tom Collins have a special place in my heart because they were a favorite cocktail of my mother. She used to make them for guests.

TOM COLLINS

Ingredients:
1 ounce fresh lemon juice
1 ounce simple syrup (mix one part water and one part sugar)
2 ounces gin
Club soda
Maraschino cherry for garnish

Directions:
In an ice filled cocktail shaker, shake the lemon juice, simple syrup, and gin. Strain into a collins glass filled with fresh ice. Top with club soda, and garnish with a maraschino cherry.
